Job summary
- Support the team in managing the supply base on quality issues and ensure the tools to manage & improve the quality of products and ingredients.
The Role
Reporting to Head of Food & Coffee, Food Technical & Safety Manager ensures that all Pret food and drink complies with the mission statement, the law, and food safety requirements, while delivering the global Pret standards at a local level in Asia.
The role holder will do this through establishing, maintaining, reviewing and continuously improving all systems, processes and standards required for food safety and due diligence, as well as building strong relationships with the local and global teams.
They will support the Food & Coffee team in managing the supply base on quality issues and ensure Pret has the tools to manage and improve the quality of inbound products and ingredients. They will provide guidance and advice on food safety and quality issues in shop and the Hub kitchen operations. It requires not only a high level of knowledge of food technology but also a clear understanding of the Pret mission statement to ensure that all products meet the standards.
The role will be required to manage the Pret Food Safety, Technical Strategy, and to work with the Global Food Technical team for its adaptation and supporting its delivery across all Pret current and future markets in Asia, both Company-owned and Partner-operated.
Responsibilities
Technical Strategy
- Developing and maintaining the Pret Food Technical Strategy with the Global Food Technical Team’s guidance
- Ensuring all Pret food complies with our mission statement and is produced and sold safely, legally and at the highest quality.
Product Management
- Managing the specification system ensuring that all ingredients have up to date specifications which are easily accessible.
- Managing the shelf life process and ensuring that shelf life for all new ingredients has been agreed prior to launch.
- Responsible for the information which is available to customers with regard to nutritional and allergy information.
- Interpreting external information so that the business can comply with relevant guidelines.
- Co-ordinating Nutritional testing programmes.
Safety
- Manage the NSF relationship for safety audits. Provide clear, constructive and supportive verbal and written feedback to the Operations team
- Use quantitative and qualitative data, along with subjective and objective opinions and observations to identify risks, trends and opportunities for improvement in safety performance.
- Undertake & Review Risk Assessments (incl Fire)
Supplier Management
- Reviewing the type and amount of foreign bodies received in the business and oversee any reduction programmes put into place.
- Responsible for the management of all 3rd party suppliers auditing within the group.
- Ensuring that there is a robust procedure for product recalls/checks, which are clearly communicated to all relevant parties through the appropriate channels.
Legal Requirements
- Remaining up to date with legal changes affecting Pret and to manage the flow of that information into the business, ensuring that Pret complies within the relevant timescales.
- Ensuring that all food related printed material in the company is factually correct and meets legal guidelines.
Requirements
- Food technology qualification at degree level
- At least 5 years’ experience in food technical roles in the F&B sector
- In depth knowledge of additives and food chemistry
- Good experience in food and beverage production or manufacturing
- Belief in and passion for the Pret brand values
- Fluent level of spoken and written Cantonese, Mandarin and English is essential
- Ability to resolve issues quickly and effectively
- Ability to build good working relationships internally and externally
